Mexican chef Santiago Lastra, who worked at Rene Redzepi’s Noma Mexico pop-up last year and has cooked at the Tate Modern is opening his debut solo restaurant Kol in London in 2019.

We don’t know exactly where Kol will be yet but the restaurant will be broadly Mexican, drawing influence from across the country, as well as making use of British produce too and it’ll feature natural wines and a mezcal bar. If his Tate residency is anything to go by we can expect dishes like smoked mushroom tacos with wild herb emulsion and fermented root powder; halibut and pink mole with pickled pumpkins and mussel powder; and pig’s head toast with chillies and vinegar

Before that, Santiago will cooking at a Day of the Dead-themed dinner at Massimo Bottura’s Refettorio Felix on Halloween, which’ll be a good chance to get a sneaky preview of the kind of food he’ll be serving at Kol. This is going to be a BIG opening so we’ll be bringing you more deets when we have them.
